BlendTec Giveaway

Isn't she a thing a beauty?


Ever see something before and know YOU HAVE TO HAVE IT?  Well that is how I feel about a BlendTec Mixer.  But I cannot seem to justify to my hubby the reason we should spend that kind of money on a blender.  He just tells me that you can buy one for a fraction of that cost.  He just does not understand.  Being a runner I drink a protein drink every single day.  I love them when they are icy and cold and well mixed.  He doesn't drink them but my kids do and I have a recipe that tastes like an Orange Julius (recipe below) and they go nuts for it.  They drink them every chance I will make one for them.  I need to win one!  Right now Discover Your Happy is giving one away.  Go over there right now...yes leave my blog...now!  And enter to win.  Good Luck!

Banana Orange Smoothie

2 cups OJ
2 Cups Ice
1 Scoop Vanilla Protein
1 frozen (slightly overripe) Banana

Place everything in Blender and blend until creamy smooth!  Enjoy...

German Pancake

 There are just somethings that stick with you from when you where young.  I remember my baby sister, Kristy loving German Pancakes.  I have had them in the past but my sister had a deep love for them when she was younger.  My son was in a rut as to what to have for breakfast this morning.  Bored with eggs, cereal, waffles and pancakes.  I asked him if he wanted to try a German Pancake..."um...sure?"  Was his response.  I whipped up this pancake and couldn't help but go back in time when Kristy's eyes would light up seeing it done.  Here's to you Kristy...

German Pancake


3 eggs
1/2 cup flour
1/2 cup whole milk
3 TBSP sugar
1/4 tsp salt
1/2  tsp vanilla

2 TBSP butter

Preheat oven to 400 degrees.  Place 2 TBSP butter in pan (Preferrably a cast iron skillet but I just used a round cake pan).  Allow butter to melt.  Mix eggs, flour, milk, sugar, salt and vanilla together.  Pour into skillet or pan.  Cook for 15 minutes.  Sprinkle with powdered sugar and top with fresh fruit.

Strawberry Lemonade with Stevia (Cafe Rio Inspired)

Strawberry Lemonade with Stevia
  
Ingredients:
           2 cups Strawberries (washed and chunked)
           2 cups Fresh Squeezed Lemon Juice (about 8-10 lemons)
           1 1/2 cups Stevia (Stevia in the Raw Cup for Cup measuring)
          12 cups water
Directions:
Clean and wash your strawberries.  Dice them up and place them in a blender.  Add Stevia.
Squeeze lemons into a strainer to catch pulp and seeds.  Add to blender.  Blend until smooth.
Once blended completely add water to your liking (I like my lemonade more concentrated and I used 6 cups of water).
Enjoy this refreshing drink!  And yes it is Atkins Phase 2 or Berry Rung Friendly.  If you would like it induction friendly just leave out the strawberries.
